I have at least one kid that is absolutely obsessed with egg bites! It makes his day when I tell him egg bites are for breakfast. But let’s be honest I don’t want to run to starbucks to get yummy egg bites.
An egg bite is the perfect easy breakfast in a hurry… or not! You can pretty much add anything you want to an egg bite, bacon, any kind of cheese, mushrooms, any veggie and the most amazing part of all… you can FREEZE them!!! So whether you’re in a rush getting out the door for church or school, these would be super helpful to get a nutritious breakfast on the table in a hurry. I have made a variation of an egg bite for over 10 years but these simple steps really make them sooo much better: 1) Blending the eggs in a blender, this adds air to the mixture making the eggs almost a cloud 2) Adding cornstarch to the eggs, I don’t do this every time or hardly ever really. But I do have to admit that it gives them that starbucks texture. I just prefer not to add things to my food that don’t need to be there as far as nutrition goes. Adding cornstarch will get you the velvety texture cornstarch adds to desserts such as pudding and 3) Steam bath, we recently switched our stove to a Kitchen Aid with a steam rack and this is pretty much the only recipe we have used it for, but it is used often because of our egg bite obsession. You can easily replicate this by just adding a 9×13 pan with a few cups of water to the bottom rack to create the same steam effect. This will add the right moisture and create a slow cooking effect.
Easy “Starbucks Style” Egg Bites
Place steam rack or 9x13 pan in the lower rack of your oven and put 2 cups of water in it. Preheat oven to 350 degrees with water in to create the steam.
Drizzle muffin pan with oil just enough for eggs not to stick or use a silicone/nonstick muffin pan.
Distribute ham and 1/2 of the cheese evenly between the 12 muffin holes, along with whatever veggies you choose to use.
In a blender combine 8 eggs, 1 cup of mozzarella cheese (or cheese of choice), salt and pepper until combined and fluffy about 30-40 seconds.
Pour egg mixture into the muffin tin making sure to leave enough room for them to rise about 1/3 of the way up. With a fork combiner everything in each hole well making sure everything is mixed up. Bake in middle rack for 25-30 min you'll know they are done when they puff up a bit and seperate a bit from the sides. (note. every oven is different, so keep and eye on them till you know how long it is in your own oven)
Allow them to cool for 3-5 minute and gently remove for muffin tin & enjoy!

Notes
To Freeze:
Cook them just as directed. Allow them to fully cool down and place them in their muffin tin into your freezer till they harden enough not to stick together. After that, you can switch them over to a ziplock bag (or any other storage you use) for freezing longer.
To Reheat:
For reheating simply put them back in the muffin tin and pop them back in the oven at 350 degrees for 5-8 min. Or you can reheat them in the microwave for 1-2 minutes, I always wrap them in a damp paper towel so that they don’t dry out while reheating.
