Easy “Starbucks Style” Egg Bites

 1 cup Ham (or meat of your choice ie. bacon)
 8 Eggs
 1 ½ cups Mozzarella Cheese ( or cheese of your choice)
 ½ tsp Salt
  tsp Pepper
 2 tbsp Cornstarch (optional- I don't usually add this but if you want the starbucks texture it is a must)

Place steam rack or 9x13 pan in the lower rack of your oven and put 2 cups of water in it. Preheat oven to 350 degrees with water in to create the steam.

Drizzle muffin pan with oil just enough for eggs not to stick or use a silicone/nonstick muffin pan.

Distribute ham and 1/2 of the cheese evenly between the 12 muffin holes, along with whatever veggies you choose to use.

In a blender combine 8 eggs, 1 cup of mozzarella cheese (or cheese of choice), salt and pepper until combined and fluffy about 30-40 seconds.

Pour egg mixture into the muffin tin making sure to leave enough room for them to rise about 1/3 of the way up. With a fork combiner everything in each hole well making sure everything is mixed up. Bake in middle rack for 25-30 min you'll know they are done when they puff up a bit and seperate a bit from the sides. (note. every oven is different, so keep and eye on them till you know how long it is in your own oven)

Allow them to cool for 3-5 minute and gently remove for muffin tin & enjoy!
